Easter Eggs
We love to color Easter Eggs.
It's a favorite family ritual.
But then, after Easter, we have all these eggs to eat.
In years past we have tried a Martha Stewart egg salad recipe, a tomato and egg curry, and, what has now become an Easter Week tradition for us, egg and cheese enchiladas. We had them again last week, much to everyone's delight. If you don't have How to Cook Everything, this blogger has a similar mole sauce recipe on her page.
This year I still wanted to try something a little different, and after our first meal at Changping's French restaurant, I thought making devilled eggs in the French style might be fun.
I wanted them to look like this

Obviously, I am not a French chef. But it was a nice variation on deviled eggs.
