A recipe from Myles

The other day I was planning to make spinach quesadillas for lunch. Everything was ready to go, except I could not get our gas to stay on. It would start to flow, but the flame would quickly go out. The problem, likely due to our not using the stove for over a month, has since resolved itself. But that afternoon I found myself stuck with chopped spinach and onions, just-shredded cheese, and thawed-out tortillas. I thought I might have to toss everything.

Then Myles had an idea. "Why not make Spinach Quesadilla Pizzas? We could bake them in the oven!"

That was definitely a better idea than chucking our planned lunch. Myles outlined the new recipe for me, and I'd like to share it here. It is the first he's suggested that did not make generous use of ketchup and we could actually eat.



Heat the oven to Pizza Temperature (that would be in excess of 400 F)
Spray the baking sheet.
Place the tortillas on the baking sheet.
Drizzle a little oil on the tortillas. Rub it in.
Put onions on first. Sprinkle the Pepper and the Cumin.
Then pile on the spinach.
Shredded Cheese.
Bake until the Cheese melts. (really not that long)

"And that's it!"

This sounds a lot better than the mustard and raisin sandwhiches I used to make as a child... :)
