Except for here, where instant pototoes are ridiculously expensive, I usually do have a box in my kitchen, too, even without having a small army to feed.
My official story to those who might find them is that I use them to thicken soups that have come out a little too thin. This is an actual use for instant mashed potatoes. Now you can feel better about having them in your pantry, too. You are prepared for a soup emergency.

Being on the receiving end of boxed mashed potatoes as one of eight, let me assure you they're not only a time saver, but if made with love can be quite tasty. (everyone say: awwww!)
